Chickpea Frittata

Ingredients

For the Vegetables (see note):
2 cups finely chopped broccoli, cauliflower, mushrooms, bell peppers (any color) or zucchini or a combination
1/4 cup finely chopped red onion
1 cup tightly packed finely chopped greens such as kale or spinach
1/2 chopped fresh cilantro or parsley
For the Batter:
1 1/2 cups water
1/4 cup raw cashews
1/2 teaspoon dried dill
1/2 teaspoon ground turmeric
1/4 teaspoon dried thyme
1/4 teaspoon black pepper, or to taste
1/8 teaspoon cayenne, or to taste
1 1/2 cups chickpea flour (garbanzo bean flour)

Instructions:

Preheat oven to 375 degrees F. Lightly wipe a pie pan or a square or rectangular pan (a 9x9 inch pie pan works well for 6 servings) with olive oil or line it with parchment paper.

To make the batter, place the water, cashews and spices in a high-powered blender and blend until smooth. Pour into a large bowl and whisk in chickpea flour. Stir in the vegetables.

Pour the frittata mixture into the prepared pie pan and bake for 45 to 50 minutes or until a toothpick inserted in the center comes our almost clean and the edges are golden.

Let sit for 10 minutes before serving. Store refrigerated for up to 3 days.

Note: Vegetables can be chopped in a food processor or by hand.
