Nutritarian Parmesan

A jar of this seasoning blend should be in your refrigerator at all times. You'll want to sprinkle it on pretty much everything.

Ingredients

1/2 cup almonds, walnuts or hemp seeds (see note)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Instructions:

Place ingredients in a food processor and pulse until the texture of grated Parmesan is achieved.

Store in a sealed container and refrigerate.

Note: A mixture of cashews and brazil nuts may also be used.

This is really tasty!  I use it on lots of things besides bean pastas with tomato sauce.  It really satisfies when you wish you could add salt!  Or just make a dish more interesting.  I make it pretty much as stated with walnuts.  Haven't tried hemp or almonds.

Love it with hemp seed!  Great way to get plant protein plus vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron, and zinc, and especially EFAs and B-12!  B-12 is very difficult to get on a vegan diet, and I love this on soups, salads, pasta... just about anything but desserts!

I double the recipe when I make this, and use half hemp seeds and half nuts. I've used walnuts and almonds before, and they're both great. I sauté veggies and cook bean pasta and some sauce, topping it with the 'Parmesan'. It's wonderful! We don't miss the dairy cheese.

Great recipe! No salt! Lower in price than the recipe I was making with cashews.
