On the Run Black Bean Burgers

Ingredients

1 1/2 cups cooked or 1 (15 ounce) can no-salt-added or low sodium black beans, drained
1/4 cup minced onion
2 cloves garlic, finely chopped
2 tablespoons low sodium ketchup
1 tablespoon low sodium mustard
1/4 cup old fashioned oats

Instructions:

Preheat oven to 350 degrees F.

In a mixing bowl, partially mash beans with a fork. Stir in onions, garlic, ketchup and mustard, then mix in the oats.

Divide into 4 burgers and place on a baking pan lined with parchment paper. Bake for 10 minutes, carefully flip and bake for another 10 minutes.

Note. Serve on a 100% whole grain bun or pita. If desired, top with lettuce, tomato, onion and sliced avocado.

An alternative is to cook use steel-cut oats (cooked separately) and use no salt-added tomato paste instead of ketchup. Then mix everything as described, but serve without baking as "sloppy Joe's."  Lots more nutrients preserved, and tastes just as good if not better.

I make a version very similar to this but I also add a 1/4 of very finely shredded carrot to the mix.  It seems to help them stick together better and adds a nutritional boost!

Delicious! And the best thing is that I usually have everything on hand. I made mine into meatballs and ate them for lunch at room temp. Definitely a keeper!

I drain the beans, i use two cans, put on sheep pan at 325 for 15 minutes or until they split.  Then while thats cooking i cook one large orvtwo small sweet potatoes with just a small bit of water.  I add cooked pitatoes, cooled beans, two chipoltes and two tb of their juice, one finely chopped bunch of cilantro and a tb of miso paste and a tb if flaxseed meal. Mis with immersion blender. Firm six patties.  Brown 4-5 minutes in non stick pan for 4-5 min.  Can freeze or fridge for three days.

It needed a lot more time in the oven. Also, I had to add more oats and ended up adding some almond meal to be able to make the patties. Some garlic powder gave it more flavor. With these modifications, it came out very good. Will make it again.

I have them in the oven now.  I added some sautéed mushrooms, 1/2 cup of oat instead of 1/4, some cumin powder, some chopped walnuts.  If I didn't add I would have only made the recipe into two patties.  There is no way, I would have gotten 4 made.

Suprisinly good!  Since they're small, we had baked sweet potato wedges with them and had two burgers left over for lunch the following day.  One observation is they tended to fall apart (but still good!).  Next time I'm going to add a "flax egg" to it to see if that will bind them better.  (A flax egg is 1 TBLS flax meal an 2 TBLS water and given time to gel).

I love these Black Bean Burgers. I double the recipe and add 1/2 cup corn and 1/2 cup peas. When done I top them with sos free BBQ sauce.

I love this recipe. Only difference is I water sauté the onions before adding them to the mixture. I sometimes eat it on a whole wheat wrap. This is a nice quick and easy recipe on evenings I don't feel like cooking a large meal.

These were so good and so easy! I doubled the recipe and threw everything into my food processor. Scooped it out with a large cookie scoop onto parchment paper-lined baking sheets, flattened into patties and baked. I made them small so they would cook through and it made about 12 patties.

The Ezekiel brand is a good choice.It is available in many food stores, sometimes in the freezer section.
