Start your day off right with this easy breakfast. Chia seeds are an excellent source of fiber and omega-3 fatty acids.

Ingredients

1/2 cup unsweetened vanilla soy, hemp or almond milk
2 tablespoons whole chia seeds
2 tablespoons old fashioned oats
1/2 banana, sliced (see note)
1/2 cup fresh blueberries or frozen, thawed

Instructions:

In a bowl, mix together non-dairy milk, chia seeds, and oats. Let mixture sit for 10 minutes. (For an on-the-run breakfast, make the night before and store in the refrigerator)

Stir in blueberries and banana. Add additional non-dairy milk if desired to adjust consistency.

Note: To maximize flavonoid absorption from berries, substitute 1/2 cup of thawed frozen cherries, mango or other fruit for the banana.

I ate this for breakfast everyday for like 2 years. I added a tablespoon ground flax too. 
My kids even loved it and had fun batching it with me. We put the oats, chia, and flax into mason jars and kept a Weems's worth ready to go. Then either the night before or the morning of we added the frozen blueberries and milk. I prefer waiting until I'm eating it to add the banana. I would start soaking around 6 am and eat it between 8-10am.

That sounds like a good idea. How much flax do you add? Seeds or ground? thanks!

I rate it a 4.5, if that's possible.  It was surprisingly good, although I did heat it in the microwave for about twenty seconds before adding the banana, to take the chill off.  I would definitely make it again.

We Love this.  I prep the dry ingredients and make up different flavors (dried apples, cinnamon, pecans in one-  dried berries in another) and then add fresh fruit after it has soaked.  Is it literally ready to eat after the 10 minute soak!

This is like delicious breakfast pudding!  It's simple to prepare and keeps you full until lunch.

Delicious and filling!  I like to sprinkle sliced almonds on top for added nutrition and a delicious crunchy texture.   I also find that letting it sit for 30" before eating softens the chia seeds further and makes it even better.

Very good however I heated it up for 30 seconds.  Thought is was a bit too cold.
