Vanilla Nice Cream

Ingredients

1/4 cup walnuts
2 ripe bananas, frozen (see note)
1/3 cup unsweetened soy, hemp or almond milk
1 teaspoon vanilla bean powder (see note)

Instructions:

Using a high-powered blender, blend walnuts to a fine powder. Add remaining ingredients and blend on high speed until smooth and creamy.

Serve immediately or store in freezer for later use.

Note:
Freeze ripe bananas at least 8 hours in advance. Peel bananas, cut into 2 inch pieces, and seal in a plastic bag before freezing.

One teaspoon of alcohol-free vanilla extract can be substituted for the vanilla bean powder.

I used a high-powered blender, and blended the walnuts first. Then added frozen bananas cut into 1 inch pieces, milk frozen into 3 small ice cubes, dates and cocoa, but my blender didn't budge. Should the bananas be left whole?

I struggled in the same way, in that with a 64oz container it was just too small a volume to blend correctly.  I would advise either doubling the recipe or use a 20oz or smaller vessel. A half cup of hemp milk was what I needed to get this going in a 64oz-er. No, I recommend cutting the bananas into thirds before freezing, it's a lot easier than trying to blend whole frozen devices.

I don't think you should freeze the milk.

Or just partially freeze the milk until it's slushy, then refreeze until it's as solid as you want.

I find it too sweet, but my husband loves this recipe. He said the chocolate version tastes like a banana split.

I did not blend the walnuts to powder before I did the recipe so it came out with larger chunks, which made it taste ike walnut ice cream...I am delighted...this is delicious!!

I doubled the recipe, added 1 Tbsp. vanilla and 1/4 cup unsweetened coconut cream as Dr Furhman suggested in a DVD and it still tates like bananas.

This was delicious!  5 Stars for sure!  I didn't have any walnuts, so I subsituted pecans instead.  As suggested, I doubled the recipe to make mixing easier in the vitamix.  Also, I used a coffee grinder to blend up the walnuts & then added them to the vitamix.  Can't wait to make it with walnuts next time!  This is CRAZY good!
